Temps stayed between 250-275 the whole time. But cooked a little fast.Looks to have a nice finish. How were they?
I’ve definitely done the cabbage ribs. Those come out so tenderRibs look good to me. If concerned about speed on a grill... highly recommend wrapping in green cabbage and foil.

Indirect method. I used that a lot before I got my smoker. I still do that when I do a larger cut such as a tri tip. I'll keep the center burner on just until I get the nice crust, then turn it off and use the side burners to finish cooking it.Delicious. And not bad for a last minute audible. My charcoal grill cooks them pretty well with this method. I'll use hickory nut husks for smoke.
