Looks to have a nice finish. How were they?
Delicious. And not bad for a last minute audible. My smoker was a wreck from the snow, so I did then on the Weber grill instead. Just put the coals on one side with some wood, ribs on the other. Temps stayed between 250-275 the whole time. But cooked a little fast.

Ribs look good to me. If concerned about speed on a grill... highly recommend wrapping in green cabbage and foil.

I’ve definitely done the cabbage ribs. Those come out so tender

Zero binder, never believed in them. 20+ yrs cooking/selling baby backs without them tells me it’s unnecessary.

I use SPG from Kinder’s. Nothing else

Indirect method. I used that a lot before I got my smoker. I still do that when I do a larger cut such as a tri tip. I'll keep the center burner on just until I get the nice crust, then turn it off and use the side burners to finish cooking it.
